Swith's Creamy Chicken Goodness
The cold and hangover cure on the cheap.
Ingredients
1 pat of butter
A box of Swansons chicken broth (no MSG, low salt variety).
1 small red pepper
1 onion
1/2 small cabbage
3 celery stalks
1-2 cloves garlic
Pepper to taste
Salt to taste
Minced fresh parsley, or 2 tablespoons dry parsley
Minced fresh oregano to taste, or dry herb to taste
1 tomato
1 small can tomato sauce
1/2 lb diced chicken
Heavy whipping cream (to taste)
Mince the crap out of all the veg except the tomato. Add veg and the pat of butter to a warm stock pan. Cook until veg are soft, adding a bit of broth if necessary.
Blanch the tomato to remove the skin, then dice.
Add broth, tomato, can of sauce and seasonings to stock pan veg.
Bring to a boil and then add chicken. Top with water or more broth, if necessary.
Allow to simmer on low an hour or so.
Add cream to taste (and to whatever texture you'd like). Warm it up and enjoy.
